You can’t really see the portabella mushroom in the bun, because I found out the hard way that the Panini grill just squishes them as they cook. Bah. It will still taste good, I hope. The portabella is in with green leaf lettuce and cheddar cheese on a giant whole wheat bun. A couple of pepperoncini peppers and a segmented orange finish up the lunch.
Trail mix – again, and hummus, raw sunflower seeds, and cucumber – again, are the snacks. I don’t like being the only one in the house who eats hummus, because it will take me a week to get through it!

I am in the same boat with you regarding the hummus! It takes me weeks to finish it.
For a few $, I usually buy a small tub of store-bought, just because I don’t have so much to get through…
The hummus bran that I buy is Sabra, which is in a 908 g container for $7.39 or $5.39 when it is on special. I started to freeze some of it into small containers.
