Sometimes, keeping it simple is the way to go. I made a Japanese style curry from scratch, with edamame. My husband isn’t keen on curry. You think he would have acclimated to it by now, being married to a Brit for almost 15 years. He’s also not keen on vegetarian food. But he said it was completely delicious, and his bento box came home empty!
Being that only two of us in the house eat rice, I like to cook batches in the rice cooker, then portion, wrap, and freeze the rice. Not only does this mean I get to eat brown rice on a weeknight without starving to death waiting for it, I get to cook once and eat multiple times. Although this is white sticky rice, shaped into an onigiri, sprinkled with black salt, but allowed to soak up the curry sauce.
Coleslaw and the most beautiful bright strawberries provide some crunch, palate-cleansing tang, and a sweet treat to finish off the meal.
The night out in Banff, Alberta, Canada was wonderful. We shopped until the shops all closed, then sat and gabbed in Starbucks until 10:00, when we were kicked out. More chatting in the car about life, the universe, and everything, and we were home just before we should have turned into pumpkins.
