May 14, 2012: Clearing out the fridge

I’m planning a big Costco trip this weekend, so in the meantime am trying my hardest to make tasty treats out of whatever happens to be in my fridge, freezer, and pantry.  Today we have faux meatballs from the freezer, with bbq sauce for taste, and grated cheese for colour.  I made pasta salad using shells (of which I have many), diced pepper, cucumber, red cabbage, and sunflower seeds.  I then threw in a Babybel, red grapes, and dried sweetened cranberries.

Been gaining a little weight lately (approaching the end of the school year means far less time for workouts and many more meetings), so instead of the usual trail mix for snack, it’s going to be a banana tomorrow.
