I made breakfast biscuits (scones) for tomorrow’s lunch. I based them on http://bentoanarchy.com/‘s flatpies – biscuits with veggie sausage links (only available in the US, so I get them across the border when I can), red pepper, and grated cheese, then baked in the oven. I flattened biscuits-from-a-can to allow for more toppings to fit on the biscuits – home made biscuits would be good, but not on a weeknight. I think for next time, that a layer of tomato sauce and a sprinkling of italian herbs to make them mini pizzas would be tasty, too.
Red pepper, cucumber, cherries, fruit jelly, and a mini dark chocolate square are the delicious sides!
