This is going to be messy to eat with my hands! I’m taking my son to the waterpark today, so this will be a poolside lunch.
For the burrito filling:
- 1 onion, finely diced –> sautee in a little olive oil
- 1 19oz can black beans, drained, 3 Tbsp taco seasoning (or 1 pouch)
- 1 cup water
Let it simmer uncovered for about 5-10 minutes until most of the water has been absorbed. I used a potato masher to semi-mash the black beans in the taco seasoning mixture. There’s a little grated cheese, fresh tomato, and some tomato salsa in the burrito, too.
Tasty sides are some cucumber, red pepper, and cherries. A pouch of iced tea hides under the lid.
