Cupcake Friday!

Coconut cupcake with coconut icing and shredded coconut on top.  These were requested by my most favourite speech-language pathologist in the whole wide world (check out that articulation challenge, see what I managed to do there?) for a big meeting she scheduled that day.  Turns out she planned to have the meeting on her birthday, and managed to persuade me to make her favourite flavour of cuppies without knowing!  Genius.

    • I learned quite a bit from this. First, coconut milk for dairy milk works for texture/baking chemistry, but doesn’t add flavour. I recommend coconut essence, but have yet to find a natural one. Second, sweetened flaked coconut works very, very nicely; better than unsweetened. Finally, sliced bounty bars make nice toppers. Back in May/June, I perfected coconut cupcakes, but this one does look really, really pretty – just not as flavourful as it could have been.
