Cupcake Friday!

Violet vanilla funfetti cupcakes with sprinkles baked into the batter and sprinkled on top.  I love the light in this photo – early morning bright sunshine – you can’t recreate this with Photoshop (all my photos are unedited by choice btw…)!  Fun memories of the Farmers Market – can’t wait to do this again next summer!  Cupcake on!

    • I rarely follow a recipe for frosting (cake batter is another story… I use my Chem to good use there), but here goes… about 1 cup/2 sticks of room-temp butter – whip that in the kitchenaid for a few minutes until light and fluffy – then I usually use a 1kg (about 2.2lbs I think) bag of icing sugar… adding a little at a time on low speed until all incorporated, then whip on high speed to fluff and blend. I add up to 1/4 cup of milk/light cream/heavy cream too. I would probably add about 1 tbsp of vanilla/other flavouring right at the I plan on doing a tutorial on swiss meringue buttercream, as the end and give it a quick but fast whip to incorporate.

      I hate to admit it, but marthastewart.com is a great source for icing and baking recipes. Everything just turns out well. I also scoured the pages of Joy of Cooking when getting started also – and I have made several recipes from there as written with success.
