More quinoa black bean salad, and stirfried bok choi

A very similar lunch to yesterday’s – hmmm, what’s in quinoa and leafy greens that my body is craving?

I put some feta cheese on the quinoa salad to fool my tastebuds away from realizing they’re getting the same food 2 days in a row, and I stirfried some bok choi in a little olive oil, then added some chili-garlic sauce and hoisin sauce to perk it up a bit – sweet, earthy, spicy, crunchy, what’s not to love? The only thing that concerns me is that the flavour profiles of each dish are quite different, but I think I’ll be okay!

Snacks are a grapefruit in the morning (OMG no trail mix?) and a hard-boiled egg for the afternoon. Switching things up a bit…
