It’s not really a chili, but it’s not a stew and it’s not a soup. I was asked to take photos of BC’s lieutenant governor as she made a quick presentation at our town’s discovery centre for the local newspaper (hubs is on their staff, I take better pictures than him, so yay for being voluntold!), so dinner was a matter of sautéing some veggies (onion, celery, peppers), adding a can of tomatoes, a can of tomato sauce, a can of black beans, and the remaining mixed beans from the last couple of days before heading out the door to participate and take photos. I threw in some spices and herbs, but I didn’t have enough chili powder to make a chili per se. By the time I got back, dinner had slowly simmered to deliciousness. It tastes really good, but I’ve no idea what it should be named!
I sprinkled a little Daiya cheese on top of the ‘dish’, and then added a green salad of posh baby lettuce and some more tiny juicy tomatoes. I will top them with a balsamic reduction, and finish lunch with an apple.
