I have leftover mini black bean burgers and baked yam fries, with sliced avocado and tomato. Then I assembled a salad with spinach and strawberries. I dressed the salad with balsamic vinegar. Deelish, and uses lots of things in the fridge – win win!

They work a treat every time, and are super deelish subbing cilantro for the parsley and adding some cumin and/or chili powder π
Spinach and strawberries is a fave of mine. Add some walnuts or pecans and a little goat cheese…yummo! How do you get your black bean burgers to stay together? I have a tasty recipe but the patties crumble. I’m thinking about adding an egg to help bind them. ???

Eggs, panko, breadcrumbs, or quinoa flour work really nicely π
A lovely combined lunch! I love it all! When I make sweet potato fries the day before, they are all gone, eaten at night! π MMMMMM!
