I’m just on a black bean burger and avocado kick lately! What can I say?
Black bean burgers with sriracha swirls, avocado baran (not my smartest idea ever, because avocado is soft and therefore doesn’t really separate foods, it just squishes pleasingly into them), and a green salad. And a very melty, not-cooled-enough-yet gluten free brownie. So, so good!

Thank you, they were so good. I think that’s why I can’t stop making them right now. They’re also nice crumbled up into pasta and tomato sauce, so they’re quite versatile.

I often forget about black beans when making veggie entrees and sides, which is a shame cause they’re so tasty. That lunch box looks amazing. I’d be thrilled to have that for lunch. Thanks for the ideas!
